In spring, the alternation of freezing and thawing between night and day induces the flow of maple sap. At the start of the season, the syrup is generally clear and has a slightly vanilla taste. As the season progresses, the syrup becomes darker and more caramelized. We use the mid-season syrup to be bottled in our bottles intended for tasting on your best dishes.
